When going after turtles I usually run a large catfish style hook on a heavy nylon line (usually 80lb +) tied off to a steel cable (usually picture hanging wire) which is looped around a anchor on the bank. Best anchor is a small tree that will bend as the turtle pulls. Then bait with a nice large chuck of chicken. Keeps the turtle alive so it can be purged.

My favorite turtle trap is the Quarles turtle trap. It's a floating cage trap that catches them alive and unharmed. This way I can release the sliders and small snappers and keep the big ones. If you happen to be selling to the live market, you have to catch them in a floating cage or a hoop net  - you can't sell a snapper with a hook in it.

I've also found that cut up beaver tail makes a great oily bait that can be re used many times, unlike chicken livers.
