WEIRD ? - Can you soak pinto beans for TOO long?

I don't soak my pinto beans. Just put a pound of beans and 2 quarts of liquid in the pot and simmer until they begin to soften, season and simmer until done. 2-3 hours usually. Much depends on how dry they are to begin with.

I have had beans that soaked 48 hrs and cooked 8 hours that were still like granite. They got pitched.

Sometimes beans that have been in storage for a long while don't soften up even if soaked overnight. However, by pressure cooking (or pressure canning), you can get many of those older beans to soften up and work just fine.
