I find for nearly any general cutting duties, I prefer something like a Mora knife. They lack a full tang, but work exceptionally well. My suggestion is to find a blade with carbon steel and either a Scandinavian or full grind as they are simpler to sharpen. You will also find various opinions on how how to sharpen the blades; some people like to make their blades sharp enough to shave hairs off of their arm. I prefer a coarser blade as I find it cuts better for general purpose, and tends not to be as easy to chip off. Your mileage may vary...
