YES, it is that difficult (you got to be an expert with the thin rolling pin), it is THAT greasy and half the delight is in the crust.

(but I see no reason not to use a pasta machine and assemble the dough strip)

Homemade phyllo. As I know it that takes a great deal of skill.

yes....but you can cheat with the past machine.
The basic idea is make many layers of with lots of some kind of fat between them so they do not stick. actually you do not have to amke many, you just have to make one with many folds in it.

make a fyllo layer (fyllo means leaf) the size of your pan....spread something oily/fatty on top and score in a spoke whell fashion. Fold the rectangles toward the center. make it again the size of your pan.
you can have as many as you wish, but make at least two for the bottom and one for the top of the pie.

If this is taxing you can stop midway. Cut a single layer of prepared fyllo into squares (smaller or larger than your palm), put your filling onto and fold into a triangle. Bake these.

Sorry to tell you all, but the Greek pie is not a diet food. Each piece of contains 700-800 kcal.
(do not eat and go to exercise..the fat and dough combination is taxing to your digestion already..it is suggested for hikers to consume after the exercise)
After all it has been the MRE of the Greek sheepherders.
Stores for some days in the backpack, can be frozen and it is even tastier reheated on the oven or in the pan.
