For SHTF / TEOTWAWKI you may want to consider adding a .50 Beowulf to your arsenal.

I'm not terribly familiar with .50 Beowulf but will check it out.  Am I correct in thinking that there's been an AR platform rifle chambered in that caliber?

Yep.  There's an AR for .50 Beowulf.
