when to harvest sorghum

Maybe I am overthinking this and there is a large range of time ?  I have a plot of multi-use sorghum but am ot going to try and get syrup, I do want to harvest the seed, grain.  Has anyone here grown it ? It is not a normal crop around here and I am struggling to find information to when I can cut the seed heads off, I do not want to let it go too long and the quail eat it all

I harvested mine (just for grain as I was growing for seed this year) just before the first frost as per internet advice.
