LOL...I feel your pain. I'm not really sure...I've got onion powder in the pantry that's like 6 or 7 years old that's still good...hard as a rock, though...when I need some, I just grate off a little.

It's good for as long as it keeps it's flavor and stays dry. As Sage pointed out, it's still good even when it clumps.  Many, many years.
Dehydrating onions just makes me hungry.  Now, dehydrating hot peppers (like habanero) will make your mace face feel good.

I was roasting some habeneros the other night. I opened the lid on the grill and it was like an open hand chop to the forehead. I was almost squirting tears.

It was so worth it, the salsa was soooooooo good.

I will defanatly be dehydrating onions and peppers this fall.

I found the first baby peppers on one of my habanero plants today.  Still nothing on the seranno's though.

I've never dehydrated onions before.  I'm gonna have to try that.

My serranos EXPLODED while we were in Missouri last week.  I need to post pics of the whole garden, it's kicking butt.

GAH!  I'm so jealous.  The serranos are the ones I want to grow the most.  I plan on dehydrating them & making ground pepper out of them.  Mine just aren't growing that great, but it hasn't really been hot enough yet.  I'm hoping they'll get with the program soon.

i made home made pepper sauce 2 years ago and ran out 2 weeks ago.  renting and no garden and the house sale has not closed yet.  so i may miss out on gardening season 100% this year.  sucks a&& is not close enough to how i feel about that.  congrats on the pepper explosion.  going to save any seeds for replanting next year?
