When to buy seed potatoes?

The eyes of the potatoes are the seeds.  You cut seed potatoes up and try and keep a eye in the center of your cut leaving as much potato on as possible.  Soak it in water the night before you plant.  Some potatoes that you purchase at the grocery store are treated where they don't sprout so it's best to purchase seed potatoes from a garden center or from an online seed store.
