lemon black bean soup

Lemon Bean Soup

1.5 T EVOO
2 ice cubes of pureed onion (about 1/3 of a medium onion.  you can add more, but we are not onion fans here)
(2c dry black beans, cooked in crockpot overnight - more info later)*
1 c veggie broth
1 c turkey stock
1 t salt
pepper to taste
¼ - ½ t celery seed
2.5 T lemon juice (or, 2 preserved lemons + 2 T juice)

fry onions in EVOO.  Add the beans and broth. puree in blender with seasonings until smooth.  return to pan and reheat, stirring until it thickens.  Stir in the lemon juice.
the recipe advises that if the soup is too thick, thin with water (or more broth). 
you can garnish with slices of lemon or boiled egg or minced onion.  we do not.

* rinse 2 c dry beans and place in 2-3 qt crock pot.  Fill with cold water, and cook on low overnight or for 8 hours.

Lemon and black beans soup is good for improving the fitness. Most of the people use lemon and black beans soups for weight losing. I think if we use lemon water it will be more beneficial for burning fat.
